I uninstalled SBS, rebooted and reinstalled SBS. Rebuilt the database. I reset the Touch to factory settings and switched it off for 5 mins.
I switched the Touch on and used it and then put it in standby (with clock showing). The server now sleeps as intended. The only things I've really done recently is upgrade SBS software and the Touch firmware. Maybe I should have restored the Touch to factory settings after the upgrade to kind of 'clean up' and finish off the upgrade? I know this is the SB Radio section but what the OP describes was exactly the same issue I was having.
