I've been playing around with Radiant CMS which I find to be very nice. It's been kept very simple and you have the ability to extend.
Only thing I didn't like was no WYSIWYG editor out of the box - I haven't found many end users who are familiar with textile and the like. But... there's a tinymce extension that looks to do the trick.
