You will need to get a gateway service that supports recurring payments , otherwise the VISA merchant compliance will make the task very complicated and messy.
I know PayPal supports it (in the US at least) and I have seen it on some Australian based providers. I guess it depends on where the money is going, do these charities have merchant accounts to receive the payments into? I'm not sure this post has been much of a help.
