"Schw�bische Maultaschen":
First you make a dough like for pasta:
400g flour
4 eggs
1 spoon of oil
1/2 tsp. salt
1 sp. of cold water
Make a heap of flour with a hollow in its midth where you put all the other
ingredients. Then mix the flour and the other ingredients.
Knead the dough for at least 10 minutes until it is smooth, shine and
elastic. Put it at a warm place and let it rest for about half an hour.
For the filling:
500g chopped meat (depends on how much filling you want)
4 eggs
3 spoons of bread crumbs
onion, parsley, salt, pepper, paprika (depends on how you like it best)
Roll out the dough so that you get two thin plates of the same size. Put
little heaps of the filling on one of the plates about 6cm between them.
Now cut the dough to squares, each square including one heap of filling. Cut
the other plate to squares, too. Take these, put them on the filling and
press together the edges of the two dough-squares.
Dry the "Maultaschen" about 10 minutes. Then cook them for about ten
minutes.
