There are a couple of things you can do.  If the skillet has been properly
seasoned there is not really a problem.  Simply heat up the skillet to a
low heat, remove any grease that is in there, then clean out the skillet
using hot water.  Don't use soap and a scrubber.  This can take away the
seasoned conditioning of the pan.

If this is not an option, you can clean out the pan and start over.  I have
found that the best way to clean a cast iron skillet is to put it into a
self cleaning oven and put the oven into a cleaning cycle.  A self cleaning
oven works by allowing the heating element to heat up the oven
continuously, unlike during a baking cycle, where the element will come on
until the over reaches the set temperature, then turn off until the over
gets below the set temperature, then come on again . . .

When self cleaning, the oven heats up to very hot temperatures, which turns
everything of a carbon nature to ash, leaving the skillet very clean.  You
will then need to wash it out using soap and hot water.  After rinsing,
again with hot water, place on a stove burner on high (if it is electric,
make sure the element is already hot).  Leave on until all traces of water
are gone.  Allow the skillet to cool, then season.  To season, turn the
oven on to about 150-200 degrees.  Coat the skillet, inside and out, with
peanut oil, olive oil or the like.  Place the skillet in the oven and leave
for about 4-5 hours.  Ocassionally open the oven and, using a paper towel,
take the oil that may pool at the bottom of the pan and re-coat the pan.
