Well brother Timothy it depends on what your are
cooking.
When the heat is properly supplied around the Dutch
oven it acts like a kitchen oven and bakes what ever is inside. This can be
accomplished in several ways. You can dig a hole and build a Imu or Bean Hole
fire over it. When the fire burns down to coals they will fall into the hole.
Scoop 1/2 or more out with a shovel and put the Dutch oven in the hole on
top of the balance of coals. Take the coals that you removed from the hole and
put them on the lid. then cover the whole thing with dirt. Heat from the coals
bakes whatever is in the Dutch oven. I remember baking a fresh Apple pie this
way a long time ago.
Method two (and this is a favorite in these here
parts), place 2/3 as many coals on top of the oven as found underneath with
the Dutch oven resting on the ground. The more coals you have top and bottom the
hotter it will get in the oven. Peek often to make sure you do not burn the
food.
I have also made stews over an open fire by hanging
the Dutch oven from a fire iron set (cross member of iron resting on two
uprights and straddling the fire).
Get yourself a good lid lifter that will balance
the lid when picked up. Saves on the hands.
