Ramon - To the best of my knowledge, there is no way to default the value on a CHOOSE list or pop-up list in the Windows version like it did in the DOS version.
The best suggestion if you are using automatic pop-ups is to have two forms - one for entering data and one just like it for editing data - but with NO automatic pop-ups. That way the user doesn't accidentally change anything.
