The rule for including your QUOTES character in text strings is: double
it. That should always work.
BTW, here's how I tested this:
R> CREATE TEMPORARY TABLE TempTable (Humpty TEXT 8,Dumpty TEXT 8)
R> INSERT INTO TempTable VALUES 'Smith','Fred'
R> SET V vGreatFall TEXT='(t1.Humpty+'',''&t2.Dumpty)'
R> SELECT &vGreatFall=30 FROM TempTable t1,TempTable t2
And got this result:
(t1.Humpty + ',' & t2.Dumpty)

Correct on both counts, and thank you. This simple construction seems to
work sometimes, not others.
Yesterday's beyond-the-list quest for a rule regarding " ' " and
(CVAL('Quotes')) in ampersand-variable strings produced mixed results:
some success, mostly failure.
The rule is out there still; I've not put my finger on it yet.
Whatever it is, it's powerful stuff.

I think this works:
SET VAR vGreatFall TEXT = '(t1.Humpty + '', '' + t2.Dumpty)'
where '' is two single quotes - not a double quote.
I also think it would be clearer to remove the space after the comma and
use the & concatenator instead:
...'','' & t2...
