David, I think you will find this is an access rights issue. You may have users set up to access My Docs. on the server though mapping and otherwise barred from the server. If you try to copy to a path, you are then rebuffed though not necessarily, in my experience, with an error msg which would be of any help.
Try copying your output file just to your server drive i.e. P:\ or X:\ or whatever and see if it ends up in My Documents automagically.
