Unfortunately, in this case the background is a photo...hence the
transparent option would be the only one that would work, as I cannot set
the variable background to a single color...

I usually do this, and it works ok:
 
Set the background color of the variable edit to the same color as your
form.
On the Effects tab, check Visible Frame and uncheck all the boxes in Frame
Sides section. (Alternately, you can set the frame color to the same color
as your form.)
 
I really don't understand the Visible Frame thing, but I've found that the
above steps make a variable edit look like a variable label.  Don't forget
to set it to Read Only and uncheck the Enabled field.

I need to display a non-editable variable in a form but I want the display
to look like a variable label, i.e. no box around the variable and
transparent, so the value displays as plain text over the background, is
there a way that I can do this? I have also thought of setting it as
variable label but I do not believe that there is a way to update the text
of the variable label with code (PROPERTY....TEXTVALUE...). TIA.
