Just wanted to thank all of you for your help. So here's what I've decided:
I'm using a double TA Cyclotouriste crank up front, chainwheels are 50 and 32 Simplex SLJ derailleur up front Shimano 8-speed cassette 13-34 teeth (custom range) Shimano XT M761 rear derailleur I think all that will work.
