I don't ride MTB terrain, but gravel (caliche) roads and some single-track (also caliche). My Honjo fenders don't make a sound. I added tire wipers and have them adjusted to just not touch the tires. They keep everything out of the fenders - rocks, sticks, chert and mud. The only sound I hear is pings on the tire wipers.
