They would work just fine, but you'd be paying a premium in price and weight. I gave up SPD shoes, cleats and pedals a while ago. I use platform pedals (, Thin Gripsters, and King Grips) with sandals. So far, I haven't, missed SPDs at all. My pedal stroke is just fine.
Good luck with finding shoes that work for you. I would stick with non-clipless shoes though.
