This is such a tough call... I have a perfectly good $600 tandem collecting dust in the garage. It gets used maybe four times a year. And it's set up pretty nicely, seen here set up with Little Big Bens: https://www.flickr.com/photos/cyclotourist/23046471715/in/photostream/lightbox/ I really want to have a fat-tired 650B tandem, and have even considered moving the canti posts down on our tandem to get that. So long/short is that I don't know if getting a $3000 (full build) tandem is going to change how often we go for rides.
