Right. I reviewed the etymology here: https://en.wikipedia.org/wiki/Cockpit
Thinking the cockpit is just the handlebars is equivalent to equating the aviation cockpit with just the yoke. It encompasses the whole area, yoke, instruments, flight controls, etc. Similarly, on a bike, it encompasses handlebars, brake levers, gear selectors, any instruments, etc. According to the wikipedia page on it, it is also official terminology of Formula One. However, in a large plane/aviation sense, it's referred to as a flight deck. While the application may be rather new given the more recent changes to bicycles to have instruments and not just controls, I have no problem making that extension to include it. However, doing this also uses a more obscure definition of 'pit'. The second Google definition of pit is: an area reserved or enclosed for a specific activity, in particular. In the case of a bicycle, the area surrounding the handlebars are certainly 'reserved for a specific activity'. In Google's definition of cockpit, this comment was made: "the place housing the controls of other vehicles (sense 1, early 20th century)" Thus, the term cockpit may also apply to bicycles.
