I have run v-brakes of one kind or another for a decade + on my MTBs. As stated above, the issue is generally improved with a bit more room between rim and pad (common on MTBs to allow for muck clearance) and the inevitable relaxing of the cables. I generally squeeze the tops of the brake arms (opposite from the pads) together and that gives me enough slack to disengage the noodle.
