Tim, When I first assembled my All-Rounder in 1998 I used Ritchey 26x1.4 tires. The bike was measurably slower than my Rivendell Road Standard. I thought "this bike is a dog!"...then I got smart(er) and changed to Pasela 26x1.25 tires. Then there was no measurable speed difference between the bikes. I ended up using the All-Rounder and those tires for several centuries including "Ride Around the Bear" that had lots of climbing. Currently on of the original, 12 year old, Ritcheys (Ritchies?) is on the front of the All-Rounder. Probably well past it's sell by date... (I'm Scottish, these things happen).
