Heavy guy here (250) - I’m a good fit on a 56cm Sam, and good on 60cm Cheviot. PBH 84.5cm.
I bet you’d really enjoy a 55cm Cheviot (as mentioned above). I ride my Cheviot with 42mm basketball tires (a.k.a Continental Sport Contact II City Tire) and fenders so there’s room to spare. I’d suggest you consider the 44mm Compass Snoqualmie tires if you won’t have fenders. Great ride, smooth and fast and fun. That said, I’ve ridden 32mm touring tires at higher weight (closer to 300) without any issues. But I agree with the general “wider is better” near consensus here.
