A Hunk or Bomba........with wide as possible tires and MTB gearing 44x32x22 chain rings and 12-32 cassette. If you use a Sugino crank get the 46x36x24 and use the new Shimano 12-36 cassette. Whatever bar you like but the Bullmoose style has good break lever ergonomics for down hill stopping otherwise a mustache bar.
