Ultegra will *usually* take a 30. On some bikes the dropout geometry will hold it too close and it won't, but on most bikes it will. Almost always with a vertical or semi-vertical dropout, it'll work fine. With most horizontal dropouts, it's cozier in there, and is somewhat more likely to give you a problem.
