A few thoughts: Youth has no inherent aversion to endurance events, as youth is thriving in ultrarunning events, though it is true that developing the aerobic system requires a willingness to not go "as fast as I can" (a good general formula being not to go over 180-age beats per minute per Phil Maffetone). One needs to stay within that aerobic threshold for 3+ months to really develop the aerobic system (which will benefit speed at all levels, but requires knowledge and patience).
Sounds to me like its a difference in culture of what is seen as "extreme" in running vs. cycling. Youth tends to like what is extreme, and there is a lot of extreme cycling happening in MTB right now.
