Desserts:
Chewy Chocolate Nut Cookies

from From Portland's Palate...
A Collection of Recipes from the City of Roses


INGREDIENTS:
1-1/2 cups butter (3 cubes), room temperature
2 cups granulated sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 (12-ounce) package chocolate chips or M&M's candies
1 cup hazelnuts or pecans, chopped
TO PREPARE:

Preheat oven to 350 degrees.

In a medium bowl, cream together butter and sugar until light and fluffy.  Add eggs and vanilla extract.  Beat well.

Combine flour, cocoa, baking soda and salt and gradually blend into creamed mixture.

Stir in chocolate chips and nuts.

Drop by teaspoonfuls onto ungreased cookie sheet.

Bake at 350 degrees, 8 to 9 minutes.  Do not overbake; cookies will be soft.  (They will puff while baking and flatten while cooling.)

Cool slightly and remove from baking sheet.

MAKES 3 to 4 DOZEN
