Soups and Vegetables:
Spinach Soufflé

from Atlanta Cooknotes


INGREDIENTS:
2 (10-ounce) packages frozen chopped spinach, cooked and drained
2 pounds small curd cottage cheese
6 eggs, beaten
1/2 pound grated cheddar cheese
1/2 pound butter, melted
Salt and pepper, to taste
TO PREPARE:

Preheat oven to 350 degrees.  Combine all ingredients and spoon into a 2-quart casserole.  Bake 45 minutes or until set.

SERVES:  16
