Appetizers, Salads and Breads:
Black-Eyed Pea Salad

Southern Recipes, Places and Traditions


INGREDIENTS:
2 (15-ounce) cans black-eyed peas, rinsed, drained
1 medium onion, chopped
1 garlic clove, pressed
2 tomatoes, chopped
3 ribs celery, chopped
1/2 cup sliced mushrooms
1 (4-ounce) can sliced black olives
1 (8-ounce) bottle zesty Italian salad dressing
1-1/2 teaspoons oregano
Salt and pepper to taste
TO PREPARE:

Combine the black-eyed peas, onion, garlic, tomatoes, celery, mushrooms and olives in a large bowl and mix well.  Add the Italian salad dressing, oregano, salt and pepper and toss to coat.  Marinate, covered, in the refrigerator for 8 to 12 hours.  Drain before serving.

SERVES: 8 to 10
