You could use one of the switched channel on your radio.  I use Ch. 5
on my futaba for starting a pump on my boats...  You have the switch
in one position, it holds the servo there, flip it to the other
position, the servo goes full travel to the opposite stop.  You'd just
need a linkage to connect the servo to the lever, and use a strong
enough servo.
