An AC motor with two wires is single phase. Internally it has two windings, each connected to the two supply wires. You need to reverse the relationship between the windings, i.e. flip one of them, to reverse rotation. (Flipping the supply wires won't do anything but flip the phase of both windings in absolute time.)
If you can extract the ends of the windings you can use a DPDT switch to connect them one way or the other. http://www.dimensionengineering.com/products/doubleswitch will allow you to use another channel to select reverse. It doesn't have an OFF position like a typical DPDT relay but that is OK here as your first channel can reduce the speed to zero.
