Of course it all depends on what you are doing. But generally I'd say using a buffering system like that would be your best bet.

Or, draw to the picture, and also draw to the canvas. Your drawing method should take a Graphics object as a parameter; it shouldn't care whether the graphics it's drawing into came from a picture, a canvas, a printer, or whatever else.
