thats beacue you replaced the ref of weekstartdate with weekenddate... they are now the same date - changes to one affects the other.

try instead:
  Dim weekenddate, weekstartdate As Date
  weekenddate=new Date
  weekstartdate=new Date
  weekstartdate.TotalSeconds=weekenddate.TotalSeconds-604800

Should this not work to get me one date and then the second one a week before???

  Dim weekenddate, weekstartdate As Date
  weekenddate=new Date
  weekstartdate=new Date
  weekstartdate=weekenddate
  weekstartdate.TotalSeconds=weekstartdate.TotalSeconds-604800

When I do this both dates are the same.....
