Uploading Mac-intended software in Stuffit format, will the end user get any problem expanding a .sitx file instead of a more common .sit file?

Yes, .sit is more compatible.

Moreover, I'd drop .sit/.sitx all over. Today, .zip is the standard format for OS X,
since Apple no longer ships StuffIt as part of OS X.
