I discovered that if I do 'Get Info' in the finder, paste something
on the app's generic icon, and cut it immediately thereafter, the
right icon shows up.

From your description it sounds like you're doing the right things.
Depending on what type of application you're building (i.e. UB/
MachO, PEF), the Finder doesn't always do the right thing after
building. Usually duplicating the application in the Finder takes
care of the problem.
