The text comming from the EditField claims at least to be UTF-8

Likely.
Basically when posting it to the SOAP service which writes it to a
database then those languages get corrupted.
I suppose, here is the problem: The database performs an additional
conversion. In case of SQLite, you
need to encode string. I'd propose to check the SQLite manuals.
In case you do use MySQL, note that the MySQL Server, the database
and the connection each have
defined text encoding an perform certain transformation.
I'd propose to track down the problem.
This is not quite the case since I had tested posting to the SOAP
service with a test console which came correctly. Which tells me that
both the SOAP service is doing it correctly and the Database.
(REALbasic was even able to read the Japanese record correctly that
was posted with the test console)
This tells me that the problem is somewhere between the REALbasic
EditField and the REALbasic Soap handling, where SOAP Parameters
containing Japanesse letters don't end up correctly on the SOAP
receiver.
The database in this case is technically not relevant since REALbasic
does not talk to it, REALbasic is only talking to SOAP).
