Since most of my builds are now handled by ide scripts, I always use
a shellcommand and 'touch' the universal app after it is built.
Seems to fix it for me. It does seem that the finder is not getting
a correct notification for that build, I wonder if it has to do with
some use of lipo to create that build?

I only see this behavior if the Finder window, of the directory
containing the built apps, is already open. If I close the window
and rebuild, the icon appears correctly.
(I'm assuming, of course, that you, like I, am using the Mac IDE.)
