I thought I would chime in on this one, and let you know that Randy is
correct in his statement.  You have more flexibility to do pre-processing to
the audio data if you don't live encode it.  Live encoding doesn't offer you
the chance to EQ, filter, or normalize.  These processes can definitely
produce better quality encodes.

I can't imagine that live encoding can match the quality of pre-encoded
material.  After digitizing at a high sample rate such as 44.1, you can take
the resultant file and process it, removing noise, applying normalization,
filtering, equalizing, etc.  Encoding this "processed" file can give
excellent results.
