Based on your description I think that danish stew is what in Denmark is called
Biksemad - and yes - it is leftovers.

Biksemad

onions
butter
boiled or roast meat, sausages and smoked bacon
boiled, cut potatoes
salt
pepper

Slice onions, fry them in a bit of butter until light brown.  Take them up, add
a little extra butter and boiled or roast meat (basically leftovers - but try
adding sausages and smoked bacon - tastes just great) cut into smaller pieces.
Add onions and boiled, cut potatoes and fry for a while until it is real hot.
Taste with salt and pepper.  Traditionally served with fried eggs, pickled red
beets, sour pickled cucumbers and rye bread. This dish calls for beer.  In
Denmark you are also served ketchup and hot spicy, brown sauces like
Worcestershire sauce, HP sauce. I have been served Biksemad with sauce bearnaise
as well. But that is not to my taste.
