 ELIZABETH BURRIS'S BROCCOLI SALAD

1 1/2 lb Broccoli
1/2 Onion, red; chopped
1 cup Sunflower seeds
1/2 cup Raisins
1 cup Mushrooms, fresh; sliced
1 cup Mayonnaise
2 Tbsp Wine vinegar, red
1/4 cup Sugar; optional
1/2 lb Bacon; cooked crisp and -crumbled

Clean and cut the whole broccoli into small pieces. Use
all of the broccoli except the end chunks. Mix together
the broccoli, onion, sunflower seeds, raisins and mushrooms.
Make the dressing by mixing the mayonnaise, vinegar and
sugar. Twenty minutes before serving, toss the salad.
Toss with the bacon and the dressing. Serves 4 to 6.

"Elizabeth Burris is a student of mine from Rich's. This
pretty salad is particularly special in winter with the
green broccoli contrasting with the red onions, white
sunflower seeds and dark raisins."
