Hamburger Skillet With Rice And Sauerkraut
(Lora Leggett)

1 pound hamburger
1/2 cup uncooked rice
1 onion, cut into bite sized pieces
1 (16 oz.) can or half a bag sauerkraut, drained and rinsed
1 tomato, cut into bite sized chunks
1 tablespoon olive oil

Brown hamburger in a frying pan.
Drain the meat and wipe out the pan.
In a separate saucepan or in the microwave cook the rice in double the
amount of water or 1 cup for 1/2 cup of raw rice. You may add a
little salt or substitute bouillon broth for the water.
Stir often to make sure the rice doesn't stick and it will come out nice
and fluffy.
Mix the cooked hamburger and the cooked rice and set aside.
Put the olive oil in the frying pan and warm on medium heat.
Add onion, then sauerkraut then tomatoes. Cook for a few minutes.
Then add the combined meat and rice mixture to the frying pan with the
vegetables.
Mix to warm and combine. Be careful not to overcook the vegetables so they
maintain their color and texture.
Also be careful not to let it go outside of the frying pan. You could
avoid this by using a deeper pan like a Dutch oven.
Cover the pan and turn the power off.
When the heat has gone down open the pan, smell how yummy it smells and dip
into serving dishes.
This is the same recipe as my unstuffed peppers from the garden except
substituting sauerkraut.
