Shrimp Gumbo

Ingrediants:

4 Slices Bacon

1 Large Onion, Quartered

2 Cloves Garlic, Minced

1 Large Green Pepper, Coarsely Chopped

1 Stick Margarine

4 Tablespoons Flour, Heaping

1 Cup Celery, Coarsely Chopped

¼ Cup Minced Fresh Parsley or 2 Tablespoons Parsley Flakes

1 Pinch of Crushed Red Peppers

¼ Teaspoon Dried Rosemary, Crushed

1 Pinch Thyme (Less than ¼ Teaspoon)

2 Tablespoons Worcestershire Sauce

2 Teaspoons Salt

¼ Teaspoon Pepper

5 Drops Tabasco Sauce

1 10 Ounce Can Rotel Tomatoes and Green Chilies

1 28 Ounce Can  Tomatoes  (diced) or 4 Cups peeled and Quartered

fresh Tomatoes

1 Small Can Tomato Sauce

1 Pound Fresh Okra, Sliced

2 Pounds Shrimp, Shelled and De veined

 

Instructions:

Fry bacon in a 6 quart pan.

Remove bacon leaving drippings to cook onions, garlic and green peppers until tender.

In a small fry pan melt 1 stick margarine and heat to bubbling, stir in 4 heaping tablespoons flour; cook until golden brown.

add 1 cup water to this flour-margarine mixture.

Stir and boil until smooth and thick.

Add this roux mixture to vegetables in the large pan.

Stir and add other ingredients, except shrimp.

Simmer for one hour. Add a little water as needed.

In a large skillet over medium heat sauté shrimp in ¼ cup margarine for about 3 minutes (or until shrimp turn pink)

Stir shrimp into Gumbo and continue to simmer on low heat for 20 to 30 minutes.

Serve over rice.

All ingredients are approximate and can be changed to suit your

taste.

 

Hint:  To Keep the Slime Out of Okra.

Wash okra in cool water.  Remove the caps and tips and cut into

¼-inch rounds.  Heat ¼ cup oil in a large pot over medium-high

heat fry the okra, stirring constantly, for 10 to 12 minutes, or

until most of the slime disappears.
