Jello Ambrosia Salad
 
1 (16 oz.) cottage cheese
1 sm. pkg. orange Jello (dry)
1 sm. can crushed pineapple, drained
1 sm. can mandarin oranges, drained
1 (8 oz.) Cool Whip
 
Sprinkle Jello over cottage cheese. Stir. Add pineapple and oranges. Mix
thoroughly. Add Cool Whip. Stir. Nuts may be added.
Mandarin Turkey Salad
Yield: 4 servings
 
1/4 cup orange juice
1-1/2 TB red wine vinegar
1-1/2 tsp. poppy seeds
1-1/2 tsp. olive oil
1 tsp. Dijon mustard
1/8 tsp. ground black pepper
5 cups torn stemmed washed red leaf lettuce
2 cups torn stemmed washed spinach 
1/2 lb. honey roasted turkey breast, cut into 1/2" julienne strips *
1 can (10-1/2 oz.) mandarin oranges, drained
 
In small bowl, combine orange juice, vinegar, poppy seeds, oil, mustard
and pepper. Set aside.
 
In large bowl, toss together lettuce, spinach, turkey and oranges. Pour
dressing over turkey mixture and serve immediately.
 
*Cooked chicken breast meat or cooked ham, may be substituted.
