SWEET POTATO CAKE & FROSTING

 

Inhgrediants:

1 1/2 cups vegetable oil

2 cups sugar

2 teaspoons cinnamon

4 eggs, beaten

2 cups self-rising flour

2 cups mashed sweet potatoes

1 teaspoon vanilla

 

Icing (recipe below)

 

Directions:

Combine oil, sugar and cinnamon in a mixing bowl, blending well.

Mix in beaten eggs.

Gradually blend in flour.

Stir in sweet potatoes and vanilla until well mixed.

Pour into a greased 10-inch tube pan.

Bake at 300 degrees for 1 hour, or until toothpick inserted in cake comes out clean.

Remove from pan and cool completely on wire rack.

Spread icing over cake.

 

ICING:

 

1 (8-ounce) package cream cheese, softened

1 stick margarine, softened

1 (16-ounce) box powdered sugar

1 teaspoon vanilla

1 cup chopped pecans

 

Cream together the cream cheese and margarine until fluffy.

Gradually mix in sugar until smooth. Stir in vanilla and nuts.
