SOUTHERN CORNBREAD DRESSING Ingrediants: 6 to 8 cups cornbread, crumbled 6 large buttermilk biscuits, crumbled 2 large onions, diced 1 c. milk 6 large eggs, beaten 1 stick butter, melted 1 T. sage, or to taste 1 T. poultry seasoning, or to taste chicken or turkey broth (boiling), enough to reach the right consistency salt & pepper, to taste Directions: Preheat oven to 400 degrees. Mix crumbled cornbread and biscuits with sage, poultry seasoning, salt, pepper and onions. This can be done several the day before cooking to allow to dry out and let flavors meld together. Beat eggs and mix with milk, melted butter and broth. Pour liquid mixture over bread mixture and mix well. Dressing batter should be very moist, almost soupy. Add more broth, as needed to achieve the right consistency. Taste to make sure the spices are right. Pour into baking pans and bake until golden brown. Be careful not to over cook or it will be too dry. "God, grant me the serenity to accept the things I cannot change; courage to change the things I can and the wisdom to know the difference."
