CANDIED APPLES Ingrediants: 12 apples (room temperature) 12 wooden sticks 4 cups sugar 1 1/2 cup Karo syrup 2 cinnamon sticks 2 cups water Red food coloring Directions: Grease cooking sheet lightly. Remove stems from apples and insert wooden sticks firmly in the stem end of apple. Combine sugar, syrup, cinnamon and water in a heavy-bottomed, medium-size saucepan, cooking over moderate heat until sugar dissolves. Cover pan and bring slowly to a boil. Remove cover and boil rapidly without stirring until 1 teaspoon of syrup dropped in cold water separates into hard, brittle threads or candy measures 300 degrees on a candy thermometer. During cooking, wrap cheesecloth around a fork and wipe inside of pan often. At 300 degrees, add enough food coloring to syrup to tint a bright red. (If using a green apple, you will need 1 bottle or more). Remove at once from heat and stir once. Tip saucepan and dip apples, one by one, into the candy, twisting to cover. Let extra syrup drip into pan. Work quickly so the candy doesn't harden. Place apples on greased sheets and allow to cool for at least one hour before serving.
