Cheese with sweets is a dessert theme found all over Latin
America, and here's a unique variation from Colombia. Be sure
to use fresh mozzarella and not the sliced or shredded stuff 
used on pizza.
Colombian Sweet Cheese (Dulce de Queso)
1 lb (450 g) fresh mozzarella
2 cups (500 ml) dark brown sugar
1 cup (250 ml) water
1 cinnamon stick
Cut the cheese into 1/4-inch (5 mm) slices and place in a 
heatproof baking dish or individual heatproof serving dishes.
Combine the sugar, water, and cinnamon stick in a pot and
bring to a boil over moderate heat, stirring to dissolve the sugar.
Boil for 5 minutes without stirring. Pour the sugar mixture over 
the cheese and serve immediately. Serves 4 to 6.

Thanks to reader April of Flat Rock, MI for today's helpful hint:
Along with the suggestion on how to clean your cast iron pan, 
you have to dry the pan. Instead of using a towel, I just put it
back onto the stove after rinsing and turn the burner on.  Keep
an eye on it and when all the water is "dried" off, turn the burner
off, cool, rub a smidgen of olive oil in it and put it away for the 
next time.  Works like a charm!
Super Snack: Soy Nuts
Snacks are essential to keep you in the Zone all day long, and one easy
snack option is soy "nuts." These nuts are actually beans, roasted so
that they have a satisfying crunch. Dr. Sears is a big fan of soybeans
because they're the only bean that contains more protein than
carbohydrates, making them the perfect protein source for vegetarians.
To make your own soy nuts, try the following: 
Soak soybeans in water for about three hours. 
Drain, then place beans on a lightly oiled cookie sheet. 
Bake at 350 degrees. 
Turn them every few minutes until they are well-browned.
