Scottish Shortbread Serves: 8 Prep. Time: 1:00 2 cups all-purpose flour 1/2 cup powdered sugar 1/4 tsp. salt 1/4 tsp. baking powder 1 cup real butter - softened 1 tsp. vanilla extract OR almond extract OR lemon extract granulated sugar - as needed for garnish, see Notes, below -Combine the flour, powdered sugar, salt, and baking powder in a mixing bowl. -Add butter and extract to bowl and beat with an electric mixer on low until thoroughly mixed. -Press flat into a buttered 9" round cake pan; prick surface with a fork several times; sprinkle with sugar. -Bake in a 350 degree oven for 30-35 minutes, or until golden. -Cut hot shortbread into 8 slices, then allow to cool in pan before separating pieces. Notes: Use colored sugar for a more decorative finish.
