Soft & Chewy Sugar Cookies Serves : 30 Prep. Time : 1:10 2 3/4 cups all-purpose flour 1 tsp. baking powder 1/2 tsp. salt 1 1/4 cups margarine - softened 2 cups granulated sugar 2 eggs 2 tsp. vanilla extract 1/4 cup granulated OR colored sugar - for garnish -Combine flour, baking powder, and salt; set aside. -With an electric mixer, cream together margarine and 2 cups sugar until fluffy. -Beat in eggs one at a time, then beat in vanilla. -Slowly beat dry mixture into wet mixture. -Roll the dough into walnut-sized balls then roll in sugar or colored sugar. -Refrigerate dough balls for at least 20 minutes OR freeze until ready to bake. -Place cookies 2" apart on an ungreased cookie sheet and flatten slightly. -Bake in a 350 degree oven for 8-10 minutes, until edges are browned
