GRILLED TUNA WITH PINEAPPLE SALSA 

1/2 cup olive oil
1/4 cup lemon juice
4 scallions, chopped, including the tops
4 tuna steaks, 1" inch thick

Pineapple salsa:
1 small fresh pineapple, cut into small cubes
1 small red onion, diced
1 medium red bell pepper, cored, seeded & diced
1 medium yellow or orange pepper, cored, seeded & diced
1/2 to 3/4 tsp finely minced jalapeno or serrano chile pepper
1 tsp ground coriander
1 tsp ground cumin
2 TBL lime juice
1 clove garlic, minced 

Combine the oil, lemon juice & scallions.
Pour over the tuna steaks in a flat pan
& marinate for several hours before grilling tuna.
Meanwhile,
prepare pineapple salsa by combining all the salsa ingredients.
Set aside.
When ready to cook, place the tuna steaks directly on a hot oiled grill.
Cook for 4 minutes on each side, turning once. Do not overcook.
Serve with salsa on top or passed in a bowl.
