Classic Parmesan Risotto 
 
INGREDIENTS 
3 Tbsp. butter   
1 medium onion, chopped   
1 cup Arborio rice   
1/2 cup dry white wine   
2 cups chicken broth   
1 cup (4 oz.) Sargento® Fancy Parmesan Shredded Cheese   
2 Tbsp. chopped fresh chives or parsley   
Freshly ground black pepper   
Salt, optional   
DIRECTIONS 
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 4
This recipe is a good source of Calcium. 
1.  Melt butter in large skillet over medium heat. Add onion; cook 5
minutes, stirring occasionally. Add rice; cook and stir 1 minute. 
2.  Stir in wine; cook until liquid is absorbed. Add 1/2 cup broth to
rice mixture; stir until liquid is absorbed. Repeat 3 times.. Cook 20
minutes or until rice is tender. 
3.  Remove from heat; stir in cheese and top with chives. Serve with
pepper. Add salt, if desired.

1 pkg. (16 oz.) frozen carrots, broccoli, water chestnuts and red
peppers, cooked, drained   
1 cup cooked wild rice   
1/4 cup Sargento® Fancy Parmesan Shredded Cheese   
Marinade: 
1/4 cup olive oil   
2 Tbsp. Sargento® Fancy Parmesan Shredded Cheese   
2 Tbsp. chopped fresh parsley   
2 Tbsp. white wine vinegar   
1/8 tsp. salt   
1 clove garlic, minced   
 
Wild Rice Veggie Salad

Refrigeration Time: 2 hours
Serves: 6
1.  Combine vegetables and wild rice in large bowl. 
2.  Combine olive oil, 2 tablespoons cheese, parsley, vinegar, salt
and garlic in small bowl; toss with rice mixture. Refrigerate, covered,
2 hours. Sprinkle with 1/4 cup cheese before serving.
