Spicing Up the Holidays
During the holidays, it's hard not to long for the foods you associate
with happy family traditions, like gingerbread, nutmeg-spiced eggnog,
and peppermint candy, to name just a few.
The good news: You can satisfy those desires by using holiday herbs and
spices — but in Zone-appropriate ways. Sometimes, just the aroma of
steam rising from a cup of peppermint tea, for instance, is enough to
quell a craving. Here are a few additional ways to spice up your
holidays:
Cinnamon is the perfect spice to perk up oatmeal or sprinkle on poached
pears. Try stirring your tea with a whole cinnamon stick.
Nutmeg is the spice associated with hard-to-resist eggnog. Dr. Sears
recommends using a pinch to spice up fruit and cottage cheese for
breakfast.
Peppermint has a nostalgic scent and is a terrific tummy soother. Try
steeping a cup of peppermint tea.
Ginger is one of the most beneficial of the Asian staples. Try this
aromatic soup for lunch:
Thai Turkey Soup
Ingredients
4 ounces ground turkey
1 1/2 cups bean sprouts
1/2 cup scallions, sliced
2 cups spinach leaves
1/4 cup cooked fine egg noodles
1 teaspoon olive oil
3 teaspoons garlic, minced
1/2 teaspoon fresh gingerroot, grated
2 tablespoons soy sauce
3 cups chicken stock
1 tablespoon hot chili pepper, finely diced
Instructions
Combine turkey, sprouts, scallions, oil, garlic, gingerroot, soy sauce,
stock, and chili pepper in a medium saucepan. Bring to a boil, reduce
heat, and simmer for 15 minutes. Add spinach and noodles. Simmer for 1
minute. Spoon into serving bowl.
To balance for a Zone meal: Serve with 1/2 cup fruit cocktail as a side
dish.
