LAND O LAKE FUDGE Fudge Ingredients: 1/2 cup LAND O LAKES® Butter 1/4 cup milk 1 (6-ounce) package (1 cup) real semi-sweet chocolate chips (We recommend NESTLÈ® TOLL HOUSE® Morsels) 3 cups powdered sugar 1 teaspoon vanilla extract 1/2 cup English toffee bits Topping Ingredients: 2 tablespoons English toffee bits Combine butter, milk and chocolate chips in large microwave-safe bowl. Microwave on HIGH or until butter and chocolate chips are melted (1 1/2 to 2 minutes). Stir in powdered sugar and vanilla; beat at medium speed, scraping bowl often, until smooth (2 to 3 minutes). Stir in 1/2 cup toffee bits by hand. Spread in buttered 8-inch square baking pan. Sprinkle 2 tablespoons toffee bits over top; gently press into fudge. Cover; refrigerate until firm (1 to 1 1/2 hours). Cut into squares. Store refrigerated in airtight container. Makes 3 dozen candies. Tip: CHOCOLATE-coated and plain toffee bits are available in the baking section. Tip: For easy cutting, line pan with aluminum foil, extending foil over sides of pan; butter foil. To serve, lift foil and fudge out of pan; cut into squares. Place squares in paper candy cups. Stove-Top Directions: Combine butter, milk and chocolate chips in 2-quart saucepan. Cook over low heat, stirring occasionally, until butter and chocolate chips are melted (5 to 10 minutes). Place chocolate mixture in large mixer bowl. Stir in powdered sugar and vanilla. Continue as directed above. MARZIPAN FUDGE 1/2 cup slivered almonds 1/4 cup heavy cream 1 tablespoon granulated sugar 1/8 teaspoon salt 1 teaspoon butter, melted 1/2 cup sweetened flaked coconut 1/2 teaspoon vanilla extract 2 tablespoons unsweetened baking cocoa 1 cup chopped walnuts Grind slivered almonds until fine. Combine in a bowl with cream, sugar, salt, melted butter, flaked coconut, vanilla, unsweetened baking cocoa, and chopped walnuts. Spread in a 9 x 9-inch baking pan about 1/2-inch thick. Let stand until dry. Makes about 16 pieces. World's Best Fudge CONTAINS PEANUTS! 1 1/2 cups butter 6 cups granulated sugar 1 1/2 cups evaporated milk 390 miniature marshmallows (4 1/3 cups) 2 cups chopped pecans 2 teaspoons vanilla extract 1 cup crunchy peanut butter 2 (12-ounce) bags chocolate chips Butter a 9 x 13-inch pan; set aside. In a 4 or 5 quart sauce pan mix butter, sugar and milk. Bring to a full rolling boil, stirring constantly. Continue boiling on medium heat until a candy thermometer reaches 236*F (110*C). Stir in chocolate chips, marshmallows and nuts mixed together, stirring until melted. Remove from heat, add vanilla and peanut butter, stir until well mixed. Pour into prepared pan and let cool at room temperature, then cut into squares. Note: This is a very good recipe for a large group. Makes about 6 pounds. Sour Cream Fudge 3/4 cup sour cream 1/4 cup milk 2 tablespoons light corn syrup 2 tablespoons butter 2 cups granulated sugar 1 teaspoon vanilla extract 1/2 cup chopped walnut (optional) Line a 8-inch square pan with lightly buttered waxed paper or aluminum foil. Set aside. In a large, heavy saucepan combine sour cream, milk, syrup, butter and sugar and cook over medium low heat. Stir until the sugar dissolves, cover with a lid briefly to get any sugar crystals off the sides of the pan. Bring to a boil, stirring constantly, and cook to the soft ball stage (238*F / 115*C) or until a small amount dropped into cold water forms a soft ball that flattens when removed from the water. Remove from heat. Let cool to room temperature, without stirring. Add vanilla and beat with a heavy wooden spoon until it starts to thicken; add the walnuts and continue to beat until candy loses some of its gloss. Spread evenly in the prepared pan. When firm, invert pan; peel off waxed paper and cut into small pieces. Store in an airtight container at room temperature. Makes about 1 1/4 pounds candy. __._,_.___
