Buttermilk Corn Bread 2 large eggs
1/3 cup of butter or margarine, melted and cooled
1 1/2 cups of buttermilk
1 1/3 cups of cornmeal
2/3 cup of all purpose flour
1 tablespoon of sugar
2 teaspoons of baking powder 1/2 teaspoon of baking soda 1/2 teaspoon of salt Preheat oven to 400ºF. Grease a 9 x 9 inch metal baking pan. In a medium bowl, with wire whisk or fork, mix eggs, melted butter and buttermilk until blended. In a large bowl, stir together cornmeal, flour, sugar, baking powder, baking soda, and salt. Stir buttermilk mixture into flour mixture just until flour is moistened. Spread batter evenly in prepared pan. Bake for 15 to 20 minutes, or until a toothpick inserted in center of bread comes out clean. cut corn bread into 9 squares, serve warm. Or cool in pan on wire rack to serve later. Makes 9 servings
