Best Ever Bran Muffins

1-1/2 c. flour
1 c. whole bran cereal or 1-1/2 c. toasted wheat bran
2-1/2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp salt
1/4 tsp ground nutmeg
1 beaten egg
1 c. milk
1/2 c. packed brown sugar
1/4 c. cooking oil
1 tsp finely shredded lemon or orange peel
1/2 c. chopped nuts

        In large mixer bowl stir together flour, bran cereal or wheat bran,
baking powder, cinnamon, salt and nutmeg. Make a well in the center.

        In another bowl, stir together egg, milk, brown sugar, oil and peel.

        Add egg mixture all at once to the flour mixture. Stir just until
moistened, batter will be lumpy. Fold in nuts.

        Bake immediately, or store covered in refrigerator up to 3 days.

        To bake, gently stir batter. Grease muffin cups or line with paper
baking cups. Fill cups 2/3 full. Bake at dg400 15-20 minutes or until
muffins are golden. Remove from pan while warm.

        Makes 12 muffins.

Variations:
        Apple Raisin: Prepared as directed but combine 1/2 cup dried apples
and 1/2 cup raisins. Add boiling water to cover. Let stand 5 minutes.
Drain. Fold into batter with the nuts. Makes 15 muffins.

        Blueberry: Prepare as directed except add 3/4 cup fresh or frozen
blueberries with the nuts. Makes 15 muffins.
